We spent 13 years building an abundant fruit forest, annual veggie beds, perennial medicinal herbs, and a healthy mixed hardwood-coniferous forest and now we’ve sold our property to the next stewards so that we can begin a new homesteading project in Vermont closer to our best friends and their kids.

Horseradish

Armoracia rusticana

You may be familiar with the strong flavor of this traditional perennial vegetable.  The root, grated and made into a condiment to help with digetion, it is often served with meat.  We like to make a fire cider with horseradish, garlic, chili, and cider vinegar which is a great salad dressing and general condiment. This plant is quite vigorous and will thrive in a raised bed with garden soil, or grow in heavy clay.  It is important to note that even when harvested annually, it can be difficult to completely remove from a garden.  Therefore, we reccomend growing it in a large pot or pots, which also makes harvesting so much easier.  You can remove part of the root and re-plant the upper portion and it will grow again next year.
